In this London Grilling we speak to Gleydson De Paula, Owner of TUPI – a European and South American restaurant in Elephant and Castle. As part of the area’s emergence on to London’s culinary scene, TUPI was born out of a love and desire to make something unique and enjoy the experience with friends. The menu is both healthy and indulgent, with seasonal menu changes to ensure ingredients sustainability including halloumi and guava for starters to seared duck breast for a main. We would also recommend trying their indulgent deserts which include flourless chocolate cake with coconut ice cream.

1. How did the concept of TUPI come about?
Well, I was born in Brazil raised in London and travelled extensively around Europe. I love Brazilian food and flavours, but I knew it was not for everyone, and I appreciate so much European cuisine as well, so when the chance presented itself to open our first location it was a matter of bringing the best of both worlds together. It seems to be working.
2. Can you describe TUPI in three words?
Healthy, indulgent & casual.
3. What drew you to Peckham to set up your restaurant?
I always had this burning desire of opening my own restaurant and when the purchase of our family home completed, we had a bit of cash left in the bank. It wasn’t much, but I saw that as opportunity, so we found this place.
4. How often do you change the menu and how do you come up with new dishes?
Our core menu changes with every season to reflect what’s fresh and at its best. There are so many new dishes in my head, but never enough space on the menu for all of them!
Some dishes are classics that we adapt to our South American heritage, but we also have a twist on South American dishes with a European touch. Every dish is created using what’s in season, using South American flavours to make it unique.
5. How have you found Social Media helps TUPI?
Social media has been a pivotal part of our marketing strategy, since day one. It has helped reach new audiences through tagging, sharing and mentioning our dishes and our location.
6. Do you plan on opening any other restaurants in the future?
Yes we certainly do. Although we will wait a couple of months until our unit in Elephant and Castle is fully established before searching for a new site. We plan to open another site around April next 2019 and one more before the end of the year that could well be a different project that we want to bring to life.
7. Do you have any events coming up at TUPI?
Nothing specific at the moment, we’re planning a few different things for October, keep tuned on our Instagram page for up dates.
We currently have a few offers such our happy hour and our bottomless brunch every weekend.
8. How do you keep up with the latest food trends?
We are constantly eating out and reading up about everything that goes on in the food industry to keep up with the lastest food trends. Although we like to think that as we create so many dishes that we are also the ones contributing to food trends!
9. What brings the TUPI family together?
It’s simple. We’re friends before anything else. It’s leading by example, I spend 6 days in the kitchen, and treat everyone as they are my own family. To be honest I spend more time with my team than with my family, so we respect each other and always try to make Tupi the best place that it can be.
